our favorite varietal, for a reason.
the first time we sampled this coffee, we were pretty blown away. it's literally everything we want from a sydra, but with a lovely sparkling acidity and smooth lactic finish that really surprised us. it's sweet, syrupy, bright, and just delicious. sydra is our roaster's favorite varietal, and this might be our favorite coffee of 2026 so far, for good reason.

sourcing and traceability
this coffee comes from our sourcing collaboration with qima coffee and their experimental lineup. qima occupies a unique space in the industry because not only do they import and export, they also are a part of the growing and harvesting of many of the coffees they have. in london, they also serve these coffees, which they roast and brew: truly farm to cup.
this coffee in particular comes from smallholder farmers in zamora chinchipe, whom which qima works with to bring coffees from smaller farms into the spotlight.
processing details
this coffee is hand-picked at peak-ripeness. the cherries first undergo a 48-hour sealed fermentation inside grainpro bags, where the mosto is isolated and mixed with a 2% salt solution to encourage lactobacillus growth. once removed, the cherries are depulped, and the brine is added back to the pulped beans for a secondary 24-hour lactic fermentation in open tanks. finally, the coffee is fully washed and moved to a controlled drying environment for a 32 day slow dry period.
varietal / cultivar
sydra is a varietal closely associated with ecuador, though it's origin is most closely related to ethiopian landraces. often referred to as bourbon sydra, it is believed that sydra is a mutation of bourbon, though it is not 100% confirmed. it became famous in recent years due to its elegance, sparkling acidity, and creamy sweetness. it has become a common varietal in competition and ultra-premium microlots.
