our approach to roasting

we understand that our coffee is only as good as the raw coffee we work with is, and we're only a small part of the bigger picture. producers put their blood, sweat, and tears into creating coffee for us to enjoy, and we feel obligated to support what they do as honestly and ethically as possible. our job is to amplify each coffee's voice, letting them speak for themselves. in order to accomplish this, we roast very delicately, as to depict each lot's flavors and unique terroir without alteration. typically, this means our roast profiles are very light (aka nordic light), or sometimes even ultralight.

walnuts past, present, and future

originally, walnuts was a coffee popup. in 2017, our founders were studying abroad in the united states, when they came across specialty coffee for the first time. what they knew as coffee, in japan, was completely different from what they experienced in the states. it was new, it was fun, it was exciting. in 2021, when they graduated and returned to japan, they decided to start walnuts, a specialty coffee popup doing weekends at an old house as well as various events around japan. and towards the end of 2023, they opened their first retail space, in koenji, a relaxed and unique neighborhood known for vintage clothing in tokyo. the whole team now lives in koenji, near the shop.

now it's 2025, and with new partnerships, years of experience, and more motivation than ever, we are starting the next chapter of walnuts. as a contemporary microroastery and cafe space, our goal is to expand more into the international scene, with more focus on sourcing, roasting, and ultimately enjoying coffee with a bigger audience. while supporting the industry, being transparent, and buying ethically, we want to make coffee that anyone can enjoy. whether you're an aficionado, a casual enthusiast, or a latte-only drinker (no shame here), we're here for you. we hope you'll stick along for our journey.
