faq
we recommend 45 days before brewing for most coffees. some coffees may take up to 60 days to start opening up. the more rest, the better! it'll be worth it, we promise.
our coffees should remain brewable up to 4 months. after that, your mileage may vary.
our coffee is roasted very light.
with our roasting, we aim for a balance of sweetness, brightness, and clarity. the lightness varies slightly between coffees, but we tend to be in somewhere in between light and ultralight. lighter than nordic, not as light as some ultralight roasters (tpc, shoebox, etc.). we dig the profile, hopefully you do too.
for pourovers -
(we are using the following recipe inspired by our friend harry/kimoi)
- hario neo (or ct62)
- cafec t90 filter (or orange cafec abeca)
- 90-93c 80ppm water
- 15g coffee:225g water (1:15 ratio)
- grind size: as fine as possible while maintaining quick drawdown
1. 50g aggressive, circular pour
2. swirl to incorporate, bloom 60 seconds
3. 90g aggressive, circular pour
4. wait until water level almost reaches coffee bed
5. 85g aggressive, circular pour with straight finish in center
6. lightly swirl then wait for drawdown
7. should finish between 2:30-3:00
for cupping -
- very fine grind (8-9 on ek43, 6.5-7.5 on timemore 078)
- 95c 80ppm water
- 10.5g coffee:150g water
for domestic orders (within japan) -
our shipping days are thursdays every week. the cut-off for making a thursday shipment is the wednesday prior, at 6pm jst. orders after this cut-off will be shipped the following thursday.
for international orders -
our shipping days are the 1st and 3rd thursdays of every month. the cut-off for making a thursday shipment is the wednesday prior, at 6pm jst. orders after this cut-off will be shipped the following shipping day.
