faq

we recommend 45 days before brewing for most coffees. some coffees may take up to 60 days to start opening up. the more rest, the better! it'll be worth it, we promise.

our coffees should remain brewable up to 4 months. after that, your mileage may vary.

our coffee is roasted very light.

the lightness varies slightly between coffees, but we tend to be in between ultralight and nordic light. lighter than nordic, darker than ultralight. we dig it, hopefully you do too.

for pourovers -
(we are using the following recipe inspired by our friend harry/kimoi)

- hario neo (or ct62)
- cafec t90 filter (or orange cafec abeca)
- 92-94c 80ppm water
- 15g coffee:240g water
- grind size: as coarse as possible while maintaining drawdown

1. 50g aggressive, circular pour
2. swirl to incorporate, bloom 60 seconds
3. 100g aggressive, circular pour
4. wait until water level almost reaches coffee bed
5. 90g aggressive, circular pour with straight finish in center
6. lightly swirl then wait for drawdown
7. should finish between 2:30-3:00

for cupping -
- very fine grind (8-9 on ek43, 7 on timemore 078)
- 95c 80ppm water
- 10.5g coffee:150g water

for domestic orders (within japan) -
our shipping days are mondays and thursdays. orders placed from thursday-sunday will be shipped monday, orders placed from monday-wednesday will be shipped thursday.

for international orders -
our shipping day is thursday. orders placed on thursdays will be shipped the following thursday, not the same day.
