gesha - anaerobic natural

finca el silencio

funky and intense.
a total 180 from the washed gesha from fincal el silencio that we so loved last year, this coffee has a funky and intense fragrance with acidity like sour candy, it's a gesha that slaps you in the face. not really something for your morning coffee, but it totally can be if you're into that. really interesting, really fun, but probably not for the washed fans.

sourcing and traceability

this coffee comes from our sourcing collaboration with qima coffee and their experimental lineup. qima occupies a unique space in the industry because not only do they import and export, they also are a part of the growing and harvesting of many of the coffees they have. in london, they also serve these coffees, which they roast and brew: truly farm to cup.

processing details

this coffee is hand-picked at peak-ripeness. whole cherries are immediately placed in an oxygen-free environment, where a tightly controlled fermentation takes place for 24-72 hours. following fermentation, the cherries are dried intact on raised beds for 15-25 days until reaching a moisture content of 10-12%.

varietal / cultivar

with origins as an ethiopian landrace variety, gesha retains a genetic bond to the birthplace of the coffee tree. since its birth, it has garnered attention for its adaptability to diverse regions, particularly in panama where it gained initial popularity. it has since successfully acclimated to many regions such as colombia, where it thrives and is able to clearly express unique terroir-driven characteristics.
