one of the tastiest coffees ethiopian coffees we've tried recently, which is a saying a lot considering how much good coffee has been coming from ethiopia lately. despite this coffee's complexity, it retains a very elegant florality throughout, has a very warm fruitiness to it, and has a very clean aftertaste. this is our first time buying from halo shashamane, and it definitely will not be our last.

sourcing and traceability
this coffee comes to us from zerihun birhanu of halo shashamane village in sidama, ethiopia. we came across zerihun's coffee through his more well-known father, dido birhanu, the 2021 coe 19th place winner from halo hartumi village.
processing details
this coffee is hand-picked at peak ripeness. immediately after harvesting, the skin is removed, and the mucilage layer is left on. the coffee is sealed in grainpro bags and fermented for 48 hours, where the sugars in the mucilage create a golden sheen, like golden honey. after fermentation, the coffee is dried on shaded african beds for 24 days.

74112 is one of ethiopia's most well-known varietals, selected and released in the 1970s. it is highly regarded for its fruitiness, juicy sweetness, and sweet florality. it is commonly found in sidama, bensa, and guji: all very famous within the modern specialty coffee community for their outstanding harvests.
