clean, sweet, elegant. this coffee is everything we wanted and more, for our first time buying from abel. at las botijas, abel specializes in the pacamara varietal, where he won 1st place at project origin's late harvest competition back to back in 2016 and 2017, and then 3rd place in 2018. the terroir of comayagua comes through elegantly, and really represents the passion and dedication of the team at las botijas. we're very happy with this coffee.

sourcing and traceability
this coffee comes to us from abel giron of finca las botijas in comayagua, honduras. sourced in collaboration with project origin and la salvaje, abel's award-winning coffees stunned us at scaj2025, leading us to make our first purchase with them.
processing details
this coffee is hand-picked at peak-ripeness. the cherries are first floated to separate low density cherries, and then pulped and dried for 10-14 hours under shade. once dry, the coffee is completely washed in concrete channels, and then dried on raised beds for 12-15 days until moisture content reaches 10-12%.
varietal / cultivar
pacamara is a hybrid varietal originally created in el salvador by crossing pacas and maragogipe, pacas being a mutation of bourbon and maragogipe a mutation of typica. this coffee is famous for its very large bean size and often very elegant cup properties. this coffee has become popular amongst south american producers, with its sweet, rich, and fun profiles.
