this coffee is everything we wanted and more. very rarely, we come across something that is non-infused, non-cofermented, and non-experimental while being incredibly fruit-forward, super sweet, and just an overall good drinking experience. it's got this lactic acidity to it that is just so pleasant both as pourover or as espresso with milk, it's really a special coffee.

sourcing and traceability
this coffee comes from our sourcing collaboration with qima coffee and their experimental lineup. qima occupies a unique space in the industry because not only do they import and export, they also are a part of the growing and harvesting of many of the coffees they have. in london, they also serve these coffees, which they roast and brew: truly farm to cup.
this coffee in particular comes from smallholder farmers in risaralda, which qima works with to bring coffees from smaller farms into the spotlight.
processing details
this coffee is hand-picked at peak-ripeness. the cherries immediately undergo fermentation in stainless steel tanks that are precisely maintained at 18°c for 36 hours. once removed, the cherries are dried on raised african beds.
varietal / cultivar
sudan rume is a rare varietal that is steadily gaining hype due to its intensely tropical fruit and spice like notes, unique to its varietal. first found in south sudan near the rume region (which is where the name comes from), it is now classified as an old ethiopian/sudanese landrace. sudan rume is a varietal that has relatively low yields, inconsistent productivity, and is expensive to grow, leading to its more premium and rare status.
